2 Situations, looking like the same cause:
i) When I add a download and let it start during the scheduled time (ie. sabnzb is paused when I add the .nzb) no files are created, even in the /downloads/tmp folder. This is reflected in the log files and when the download completes I get an "out of retention" error. Sabnzb does generate the traffic relevant to the download.
ii) I add a download and let it start a little, then let it complete during a scheduled time - The files are created in the /downloads/tmp folder EXCEPT for the .par files. They are not moved to the /downloads/genre/name folder and a similar error is shown: "Download failed - Out of your server's retention?"

Check your connection in Status and Interface settings window.
Use Test Server in Config > Servers.
We will probably ask you to do a test using only basic settings. - Do you experience problems during repair or unpacking?
Enable +Debug logging in the Status and Interface settings window and share the relevant parts of the log here using [ code ] sections.

The error says it all, SABnzbd is not allowed to write to /Volumes/TerraFirma/Downloads/tmp
Is this a valid path?
BTW: the smallest par2 file is downloaded, the rest only when needed for repair.

Yeah, it sure does download the smalles par2 and not the rest when I let scheduled download complete a manually started download - Many "insufficient error blocks" messages ahoy from par programs leading me to download the rest manually.
Re: the valid dir, /Volumes/TerraFirma/Downloads/tmp is indeed a valid dir which will be written into during a manually started download.
PS - After talking in the chatroom I thought I'd clarify manual vi scheduled:
sabnzb is set to pause and resume downloads at a certain daily time.
Manual: I add the .nzb while sab is already paused and click resume
Scheduled: I add the .nzb while sab is paused and wait for it to unpause it self according to the schedule.

Unless pausing leads OSX to unmount the volume, I see no issues with pause/resume.
Even restarting SABnzbd halfway a download isn't an issue.
Is this "TerraFirma" thing an external drive?
I have seen more complaints about external drives falling asleep and not re-mounting automatically.
BTW: are you sure that the extra par2 files are actually in the NZB file?
After the first par2 file is in, the rest is sent to the end of the file list and flagged as "waiting".
