There are also SynoCommunity packages for Synology (see https://sabnzbd.org/wiki/installation/install-nas) , that are much simpeler for beginners.
They are available for SABnzbd/Sonarr/Radarr.

Then the nzbs don't contain any category information.
You can check that by opening the NZB with a text editor and see if it contains any Category tags at the top.
If they are there, Sab can use them to identify the correct category if configured correctly.

Yes this doesn't work if you have Renaming and Unwanted Files enabled.
But it should always log directory deletions in Debug mode.

And when you add them manually, how do you add them? Drag and drop or double click the NZB file?

How do you add downloads? RSS? Manual downloads? Watched folders?
What are your Categories settings?

No files are deleted during queue repair, as far as I know.

You must have turned that off manually, it's enabled by default

Your description about unpacking problems are too vague. You have to share actual logs before we can do anything.

Because that's a bit too obvious... It's also shown to you in the speed limit slider what you configured as maximum.

It's also something you configure yourself, not set by us.
