From the Mac, for what do you use the NAS? So:
- SAB's Incomplete aka Temp on NAS? Not good! Put it local on your Mac
- SAB's Complete on NAS? Should be OK ... if your NAS and LAN can hande it.
So:
Test with Incomplete on your MAC: still disconnects? If so, put Complete on your MAC and test again

What is a "launcher"? What does "error: no operation specified (use -h for help)" mean? You could look for: sabnzbd, sabnzbdplus, SABnzbd.py But ... how about SABnzbd from docker / flatpak / snap? They bring everything in one package, and no Linux/OS dependencies/specials (like ....

I'm a bit reluctant to help further: this was (and is?) a hardware problem. Maybe your disk is faulty too. Google "linux check disk health". Furthermore, with your broken RAM your OS / filesystem can be broken too. So I would start with a fresh install of your OS. And then install Ubuntu, ...

Yes. That way you can check if that works with that eu-tst.newsgroupdirect.com newsserver. If so, the fault is on your Debian ... maybe the disk.

So SABnzbd is still not writing to sabnzbd.log. Very werid.
I would go back to square one:
stop sabnzbdplus

SABnzbd should always automatically create ~/.sabnzbd/logs/sabnzbd.log, not matter the logging level.
