Nzbfinder is an indexer, not a usenet server. You mistakenly configured nzbfinder as a usenet server in sabnzbd. That isn't going to work.

You don't want that unrar. Uninstall 'unrar-free' (its support for modern rar features is far too limited to be useful), and install the proper one (binary package 'unrar', from multiverse). Sabnzbd does warn about that too, iirc.

You can set all directories (download/incomplete/category/script/etc.) in sab to any directory of your choice by specifying an absolute (full) path. In linux systems such as your ubuntu system inside docker, a path is considered absolute if it starts with a /.

It's possible to disable postproc altogether by setting 'processing' for the (default) category to download only. The other (and way nicer unless you have too much free time) option to avoid your issue is to use 'pause downloading during post-processing' under switches.

On Linux: nothing. Packages simply declare a dependency on par2, and installing sabnzbd thus pulls in a stand-alone package for that. Par2-mt seized to exist as a seperate project years ago, its patches have been merged into the main par2 project. The host uses a cloudflare ssl certificate that requires client-side SNI support. Needs Python >= 2.7.9 iirc.
