So I asume this currently not possible in Sabnzbd (would be great to have it though) but maybe there's an addon or some other way to do this? I'm not sure how the queue works but would it be possible to stop Sabnzb, edit a file in Notepad and restart Sab for instance?

Check your connection in Status and Interface settings window.
Use Test Server in Config > Servers.

Not possible.
Forget about editing, it's all stored in sensitive binary files.
You can write scripts that use the API.
The best way is to make sure stuff has the right category when it enters the queue.
RSS has provisions and so has the watched folder.
