Is it possible to disable a server? So not removing it but make sabnzbd not using it for downloading.

Check your connection in Status and Interface settings window.
Use Test Server in Config > Servers.

Just set amount of "connections" to 0.

So that's how it's done? DOH! I've been deleting the servers that I want to temporarily disable
