Slow unpack to internal nvme SSD - Docker - M1 Mac mini

50gb file, in 40 minuets, on a m1 mini. its using the internal drive, for all processing, unpacking etc, it then moves the file over to an array.
Seems very long compared to my previous NAS.
Is this something to with MacOS and docker? Heres a test of the internal HDD
