In version 0.5.x we were able to use templates. My favorite one plush plash but I'm guessing since there are major changes in SAB 0.6.x is will not be working?

Maybe, maybe not.
The templates are tightly coupled with the versions of SABnzbd.
So a third-party will have a hard time maintaining an alternative skin.
The 0.6.x Plush has improved quite a lot, just try it.

I know, I love the new look and improvements. Don't get it personal I just don't enjoy the colors

Most of the colors are defined in the CSS file, so go knock yourself out
